500g fresh rice noodles or rice stick noodles
2L good quality fish stock
4 x 100g barramundi fillets
1 carrot, peeled and cut julienne
1 handful of snow peas, cut in half diagonally
1 handful of bean shoots, plus extra to garnish
2 baby bok choy, leaves cut in half lengthways
  1. Cook rice noodles according to manufacturer’s instructions, drain well and set to one side.
  2. Pour fish stock into a large saucepan, add ½ of the tub of Obela Thai Chilli, Lemongrass, Coriander and Cashews Deli Style Dip and place over a high heat. Bring to the boil then reduce heat to simmer. Gently add the fish pieces and veggies and poach for 2-3 minutes or until the fish is cooked to your liking. Remove from heat.
  3. Divide the rice noodles between 4 serving bowls. Ladle over broth with fish and veggies, evenly between the bowls.
  4. Finish with a spoonful of Obela Thai Chilli, Lemongrass and Cashews Deli Style Dip and garnish with extra bean shoots and baby bok choy leaves if desired.
