Ingredients
200g
good quality beef, eye fillet
40ml
extra virgin olive oil
100g
parmesan cheese
For garnish
basil leaves
To taste
sea salt and cracked pepper
Directions
- Wrap the beef fillet firmly in plastic film to shape into a cylinder and freeze for 30 minutes.
- Remove and unwrap. Using a very sharp knife cut into thin slices 2-3mm thick and place in a single layer between 2 sheets of plastic film and flatten with a rolling pin.
- Arrange on a serving plate, drizzle with oil and season with sea salt and pepper.
- Finish with quenelles of Obela Balsamic Beetroot, Feta and Cashews Deli Style Dip, a scatter of freshly shaved parmesan and baby basil leaves. Serve with rye toast or brioche croutons.
