200g good quality beef, eye fillet
40ml extra virgin olive oil
100g parmesan cheese
For garnish basil leaves
To taste sea salt and cracked pepper
  1. Wrap the beef fillet firmly in plastic film to shape into a cylinder and freeze for 30 minutes.
  2. Remove and unwrap. Using a very sharp knife cut into thin slices 2-3mm thick and place in a single layer between 2 sheets of plastic film and flatten with a rolling pin.
  3. Arrange on a serving plate, drizzle with oil and season with sea salt and pepper.
  4. Finish with quenelles of Obela Balsamic Beetroot, Feta and Cashews Deli Style Dip, a scatter of freshly shaved parmesan and baby basil leaves. Serve with rye toast or brioche croutons.
